- 1 fresh pineapple (cut into bite-sized pieces)
- 1 cup sweetened shredded coconut
- ½ cup all-purpose flour
- 2 large eggs (beaten)
- ¼ cup coconut milk
- ¼ cup sweetened condensed milk
- Vegetable oil (for frying)
Instructions
- Set up three dipping stations: one with flour, one with beaten eggs, and one with shredded coconut.
- Coat each pineapple piece by dipping it in flour, then egg, and finally rolling it in shredded coconut until well-coated.
- Heat vegetable oil in a deep frying pan to 350°F (175°C). Fry the coated pineapple pieces in batches for about 2-3 minutes on each side until golden brown.
- Drain the fried bites on paper towels to remove excess oil.
- In a small bowl, mix coconut milk and sweetened condensed milk and drizzle over warm Coconut Pineapple Bites before serving.
