Ingredients
- 4 cod fillets (about 6 ounces each)
- 1 tablespoon olive oil
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Fresh basil, chopped
- Juice of 1 lemon
- Salt and black pepper
Instructions
- Pat cod fillets dry and season both sides with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Cook the cod for 3-4 minutes on each side until golden brown; set aside.
- In the same skillet, add cherry tomatoes and cook until softened (2-3 minutes). Stir in garlic and oregano; cook for another 2 minutes.
- Return cod to the skillet, spoon sauce over fillets, and heat through for about a minute.
- Garnish with fresh basil and a squeeze of lemon before serving.
