- For icing: 1 cup powdered sugar, 1 tablespoon lemon juice, and a pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a bowl, mix sugar and lemon zest until fragrant. Add eggs and whisk until smooth, then incorporate melted butter, oil, sour cream, and vanilla.
- In another bowl, sift together flour, baking powder, baking soda, and salt. Gently fold dry ingredients into wet mixture.
- Gradually add milk while mixing until smooth.
- Pour the batter into the prepared pan and bake for 45–55 minutes until a skewer comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
- For icing, whisk together powdered sugar, lemon juice, milk, and salt until smooth; pour over cooled loaf.
