- Dressing: olive oil, lime juice, honey, chili powder, cumin, salt, pepper
Instructions
- In a large mixing bowl, combine the black beans, black-eyed peas, diced tomatoes, jalapeno, corn, avocado, orange bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin, salt, and pepper until well combined.
- Pour the dressing over the bean mixture and gently toss to coat all ingredients evenly.
- Serve immediately as a refreshing salad or alongside tortilla chips for dipping.
