Ingredients
- 3 pounds boneless turkey breast
- 2 cups fresh cranberries
- 1 cup orange juice
- 1/2 cup brown sugar
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon Dijon mustard
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon minced garlic
- Zest of 1 orange
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Pat the turkey breast dry and season with salt and pepper.
- In a medium saucepan over medium heat, combine cranberries, orange juice, brown sugar, honey, olive oil, Dijon mustard, cinnamon, ginger, and garlic; simmer until cranberries burst and sauce thickens (10-15 minutes). Stir in orange zest.
- Place the turkey in a roasting pan and brush half of the glaze on top. Roast for about 1.5 to 2 hours until the internal temperature reaches 165°F (75°C), basting every 30 minutes with reserved glaze.
- Let rest for 10-15 minutes before slicing; garnish with chopped parsley.
