- 1 cup dried cranberries, chopped
- 1 cup pecans, finely chopped
Instructions
- In a mixing bowl, combine softened cream cheese and goat cheese until smooth. Add honey, vanilla extract, salt, and pepper; mix well.
- Fold in chopped cranberries and half of the pecans evenly.
- Spoon the mixture onto plastic wrap and shape into a log. Wrap tightly and refrigerate for at least 2 hours.
- Once firm, roll the log in remaining pecans to coat evenly.
- Serve on a platter with garnishes like fresh herbs if desired.
