Ingredients
- 2 medium sweet potatoes
- ½ cup goat cheese
- ½ cup dried cranberries
- ½ cup pecans
- 2 tablespoons honey
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- On a baking sheet, toss peeled and cubed sweet potatoes with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
- While roasting, mix dried cranberries, chopped pecans, honey, and balsamic vinegar in a bowl.
- Once sweet potatoes are done, let them cool slightly before topping each cube with goat cheese followed by the cranberry-pecan mixture.
- Garnish with fresh parsley if desired and serve warm or at room temperature.
