- 4 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 2 large sweet potatoes, peeled and diced
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Season chicken breasts with Cajun seasoning on both sides.
- In a large skillet, heat olive oil over medium-high heat. Cook chicken for 6-7 minutes per side until cooked through. Remove from skillet.
- In the same skillet, add diced sweet potatoes, salt, and pepper. Sauté for about 10 minutes until softened.
- Pour in chicken broth and heavy cream, adding garlic powder and onion powder. Simmer for 3-4 minutes to thicken.
- Return chicken to skillet, spoon sauce over it, sprinkle with Parmesan cheese, cover, and cook for another 2-3 minutes until cheese melts.
- Garnish with fresh parsley before serving.
