  • 4 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 large sweet potatoes, peeled and diced
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with Cajun seasoning on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Cook chicken for 6-7 minutes per side until cooked through. Remove from skillet.
  3. In the same skillet, add diced sweet potatoes, salt, and pepper. Sauté for about 10 minutes until softened.
  4. Pour in chicken broth and heavy cream, adding garlic powder and onion powder. Simmer for 3-4 minutes to thicken.
  5. Return chicken to skillet, spoon sauce over it, sprinkle with Parmesan cheese, cover, and cook for another 2-3 minutes until cheese melts.
  6. Garnish with fresh parsley before serving.
