- 12 ounces fettuccine pasta
- 1 pound boneless, skinless chicken breasts
- 1 cup bell peppers (red and green)
- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- Cajun seasoning
Instructions
- Cook fettuccine according to package instructions until al dente; drain and set aside.
- Season chicken with Cajun seasoning, salt, and pepper. In a skillet over medium-high heat, heat olive oil and cook chicken until golden brown (5-7 minutes). Remove from skillet.
- Sauté sliced bell peppers in the same skillet for 3-4 minutes until tender; add minced garlic and cook for an additional 30 seconds.
- Pour in chicken broth and heavy cream; bring to a simmer for 4-5 minutes until thickened.
- Stir in Parmesan cheese until melted, then add cooked pasta and chicken back to the skillet, tossing to combine.
- Serve garnished with fresh parsley.
