Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 teaspoons Cajun seasoning
- 1 tablespoon olive oil
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Season the chicken breasts with Cajun seasoning on both sides.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add sliced bell peppers and onion; sauté for about 5 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
- Pour in chicken broth, scraping the skillet's bottom to deglaze. Reduce heat and stir in heavy cream, Dijon mustard, and Worcestershire sauce; simmer for 3-5 minutes until slightly thickened.
- Return the chicken to the skillet and coat it well in the creamy sauce. Season with salt and pepper.
- Serve over cooked rice and garnish with freshly chopped parsley.
