  • 1 pound boneless, skinless chicken breasts
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with Cajun seasoning on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add sliced bell peppers and onion; sauté for about 5 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  4. Pour in chicken broth, scraping the skillet's bottom to deglaze. Reduce heat and stir in heavy cream, Dijon mustard, and Worcestershire sauce; simmer for 3-5 minutes until slightly thickened.
  5. Return the chicken to the skillet and coat it well in the creamy sauce. Season with salt and pepper.
  6. Serve over cooked rice and garnish with freshly chopped parsley.
