- 8 ounces penne pasta
- 1 pound Italian sausage, sliced
- 1 teaspoon Cajun seasoning
- 1 large bell pepper, sliced
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- Olive oil, salt, and pepper
Instructions
- Cook penne pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced Italian sausage and cook until browned (5-7 minutes). Season with salt, pepper, and Cajun seasoning; remove from skillet.
- Sauté chopped onion and sliced bell pepper in the same skillet until softened (about 5 minutes). Stir in minced garlic for another 30 seconds.
- Pour in chicken broth and heavy cream; simmer gently for about 5 minutes until slightly thickened.
- Combine cooked sausage and drained pasta into the sauce; stir in mozzarella cheese gradually until melted.
- Serve hot, garnished with fresh parsley.
