- 1 pound chicken breast, diced
- 1 pound potato gnocchi
- 3 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- Salt and black pepper to taste
Instructions
- In a large skillet over medium heat, add olive oil. Season the diced chicken with salt and pepper, then brown until cooked through (about 5-7 minutes). Remove from skillet.
- In the same skillet, sauté minced garlic for 30 seconds, then add spinach until wilted. Set aside.
- Melt butter in the skillet, whisk in flour for 1 minute to create a roux. Gradually whisk in chicken broth and heavy cream; simmer until thickened (4-5 minutes).
- Stir in parmesan until melted and smooth. Add gnocchi and mix well.
- Return chicken and spinach to the skillet; combine gently.
- Serve warm, garnished with fresh parsley.
