  • 2 tablespoons olive oil

  • 1 bell pepper, finely chopped (red or green)
  • 2 cups fresh spinach, chopped
  • 2 teaspoons minced garlic
  • ½ teaspoon dried oregano
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded mozzarella cheese
  • 1 package (store-bought or homemade) pizza dough
  • 1 egg, beaten (for egg wash)
  • Chopped fresh parsley for garnish

Instructions

  1. Cook the cubed chicken in a skillet until browned and cooked through. Remove and set aside.
  2. In the same skillet, sauté chopped onion, bell pepper, and spinach until softened. Add minced garlic and oregano; stir in the cooked chicken.
  3. In a saucepan, melt butter to create a roux with flour; whisk in milk gradually to thicken into béchamel sauce, adding half of the mozzarella until melted.
  4. Roll out the pizza dough on a floured surface. Spread the chicken mixture over it, pour the béchamel sauce on top, and sprinkle remaining cheese.
  5. Bake in a preheated oven until golden brown and bubbly.
