Ingredients
- 1 pound boneless, skinless chicken breast
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 1 bell pepper, finely chopped (red or green)
- 2 cups fresh spinach, chopped
- 2 teaspoons minced garlic
- ½ teaspoon dried oregano
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 cup shredded mozzarella cheese
- 1 package (store-bought or homemade) pizza dough
- 1 egg, beaten (for egg wash)
- Chopped fresh parsley for garnish
Instructions
- Cook the cubed chicken in a skillet until browned and cooked through. Remove and set aside.
- In the same skillet, sauté chopped onion, bell pepper, and spinach until softened. Add minced garlic and oregano; stir in the cooked chicken.
- In a saucepan, melt butter to create a roux with flour; whisk in milk gradually to thicken into béchamel sauce, adding half of the mozzarella until melted.
- Roll out the pizza dough on a floured surface. Spread the chicken mixture over it, pour the béchamel sauce on top, and sprinkle remaining cheese.
- Bake in a preheated oven until golden brown and bubbly.
