  • 1 pound Yukon gold potatoes, cut into ½-inch cubes
  • 3 garlic cloves, minced
  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee until melted.
  2. Add the potatoes along with minced garlic, thyme, oregano, salt, and pepper. Cook for about 8-10 minutes until golden brown and fork-tender.
  3. Increase heat to medium-high and add the remaining ghee. Sear steak cubes (seasoned with salt and pepper) for 3-4 minutes until golden brown.
  4. Return cooked potatoes to the pan; stir gently to combine and adjust seasoning as needed.
  5. Garnish with chopped parsley and serve immediately.
