Ingredients
- 1 ¼ pounds sirloin steak, cut into ½-inch cubes
- 1 pound Yukon gold potatoes, cut into ½-inch cubes
- 3 garlic cloves, minced
- ¼ cup ghee or butter
- 1 tablespoon olive oil
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee until melted.
- Add the potatoes along with minced garlic, thyme, oregano, salt, and pepper. Cook for about 8-10 minutes until golden brown and fork-tender.
- Increase heat to medium-high and add the remaining ghee. Sear steak cubes (seasoned with salt and pepper) for 3-4 minutes until golden brown.
- Return cooked potatoes to the pan; stir gently to combine and adjust seasoning as needed.
- Garnish with chopped parsley and serve immediately.
