Ingredients
- 4 boneless, skinless chicken breasts
- 8 ounces fresh mushrooms, sliced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and sear the chicken for 6-7 minutes on each side until golden brown. Remove from pan.
- Sauté mushrooms in the same skillet until browned. Add garlic, thyme, and optional red pepper flakes; cook for another minute.
- Pour in chicken broth and simmer for 2 minutes. Stir in heavy cream and Parmesan until smooth.
- Return chicken to the skillet, spoon sauce over it, and simmer for an additional 3-4 minutes.
- Serve garnished with freshly chopped parsley.
