Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 pound gnocchi
- 2 cups fresh spinach, chopped
- ½ cup grated Parmesan cheese
Instructions
- In a large pot, heat olive oil over medium heat. Sauté the onion until translucent (about 5 minutes). Add garlic and cook for another 30 seconds.
- Stir in diced tomatoes and vegetable broth; season with basil, oregano, salt, and pepper. Bring to a simmer.
- Add gnocchi and cook according to package instructions (2-3 minutes or until they float).
- Reduce heat to low; stir in heavy cream and spinach. Simmer for an additional 2-3 minutes until spinach wilts.
- Remove from heat, stir in Parmesan cheese until melted and creamy.
- Serve warm, garnished with fresh basil if desired.
