- 2 large chicken breasts
- 2 teaspoons Cajun seasoning
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon olive oil
- ½ cup sweet chili sauce
- ½ cup cream cheese, softened
- 1 tablespoon honey
- 1 tablespoon fresh lime juice
- 2 large baguettes
- 1 cup lettuce, shredded
- 1 medium tomato, sliced
- ½ cup sliced red onion
Instructions
- Season sliced chicken breasts with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium heat and cook chicken until browned (6-8 minutes). Remove from heat.
- In a mixing bowl, blend sweet chili sauce, cream cheese, honey, and lime juice until smooth.
- Cut each baguette in half lengthwise and generously spread the creamy sauce on both sides.
- Layer cooked Cajun chicken on the bottom halves of the baguettes. Top with shredded lettuce, sliced tomatoes, and red onions.
- Place the top halves back on the sandwiches, cut into pieces if desired, and serve immediately.
