- 4 cups vegetable or chicken broth

- 2 celery stalks, diced
- 1 cup fresh spinach, chopped
- 9 ounces cheese tortellini (fresh or frozen)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened (5-7 minutes). Stir in garlic and herbs; cook until fragrant (about 1 minute).
- Pour in the broth; bring to a gentle simmer.
- Add tortellini; cook according to package instructions (3-5 minutes) until tender.
- Stir in spinach and cream; cook until heated through (2-3 minutes).
- Remove from heat and stir in Parmesan until melted. Season with salt and pepper.
- Serve hot, garnished with parsley.
