Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 3 cloves garlic, minced
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat; sear chicken for 5-7 minutes per side until golden brown. Remove and set aside.
- In the same skillet, sauté minced garlic for 30 seconds; add sun-dried tomatoes and cook for another 2-3 minutes.
- Pour in heavy cream and stir in Italian seasoning and Parmesan cheese; bring to a simmer before adding spinach until wilted.
- Return chicken to the skillet, spoon sauce over it, and cook for an additional 2-3 minutes to heat through.
- Garnish with fresh basil before serving.
