Ingredients
- 12 ounces penne pasta
- 1 pound salmon fillets
- 2 tablespoons olive oil
- 1 cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- 2 teaspoons minced garlic
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions until al dente; drain and set aside.
- Season the salmon with salt and pepper. In a skillet over medium heat, add olive oil and cook the salmon for about 4-5 minutes on each side until cooked through. Flake the salmon into large pieces.
- In the same skillet, sauté minced garlic for 30 seconds. Then pour in heavy cream, add sun-dried tomatoes and Italian seasoning, simmering for 3-4 minutes until slightly thickened.
- Stir in fresh spinach until wilted; then fold in flaked salmon and Parmesan cheese.
- Add the cooked penne, tossing gently to coat everything in the creamy sauce.
- Serve immediately, garnished with fresh basil leaves if desired.
