Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, toss carrot fries with olive oil, salt, black pepper, and smoked paprika until coated.
- Line a baking sheet with parchment paper and spread the carrot fries in a single layer.
- Bake for 20-25 minutes, turning halfway through until crispy and golden brown.
- In a medium bowl, mix ricotta cheese, honey, and lemon juice until smooth.
- In a small bowl, combine chopped pistachios, parsley, and lemon zest.
- Serve warm carrot fries with the whipped honey-ricotta dip and sprinkle pistachio gremolata on top.
