Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the potatoes, then slice them thinly using a mandoline or sharp knife.
- In a large mixing bowl, toss potato slices with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika until evenly coated.
- Grease a muffin tin lightly with cooking spray or olive oil.
- Stack the seasoned potato slices in each muffin cup, overlapping slightly.
- Bake for 25-30 minutes until edges are crispy and golden brown.
- Allow cooling for a few minutes before carefully removing stacks with a fork or tongs; garnish with chopped chives.
