  • 4 cups beef broth
  • 1 can (15 oz) cream of mushroom soup
  • 1 cup milk (or half-and-half)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain excess fat and transfer to the crock pot.
  2. Add chopped onion, minced garlic, diced potatoes, beef broth, cream of mushroom soup, milk (or half-and-half), thyme, salt, and pepper to the crock pot. Stir well.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours until the potatoes are tender.
  4. Stir in shredded cheddar cheese (if using) before serving.
  5. Ladle into bowls and garnish with fresh parsley.
