  • 1 lb dry navy beans (soaked overnight)
  • 12 oz applewood smoked bacon (chopped)
  • 1 sweet onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups chicken stock
  • 1 cup bourbon (optional)
  • 3/4 cup BBQ sauce
  • 1/4 cup ketchup
  • 2 Tbsp molasses
  • 3 Tbsp pure maple syrup
  • 1/2 cup brown sugar
  • smoked paprika
  • ground cumin

Instructions

  1. Soak the navy beans in water overnight. Drain and rinse before use.
  2. In a skillet, cook chopped bacon until crispy; remove with a slotted spoon.
  3. Sauté onions in the bacon grease until caramelized; add minced garlic and cook for an additional two minutes.
  4. In a large pot, combine soaked beans, chicken stock, bourbon (if using), BBQ sauce, ketchup, molasses, maple syrup, brown sugar, smoked paprika, and cumin. Bring to a boil.
  5. Pour the mixture into the crockpot along with the bacon and sautéed onions and garlic.
  6. Cook on high for 5-6 hours or low for 10-12 hours. Stir occasionally.
  7. After cooking, let sit on warm for an additional 30 minutes to thicken.
