- 1 lb dry navy beans (soaked overnight)
- 12 oz applewood smoked bacon (chopped)
- 1 sweet onion (chopped)
- 3 cloves garlic (minced)
- 2 cups chicken stock
- 1 cup bourbon (optional)
- 3/4 cup BBQ sauce
- 1/4 cup ketchup
- 2 Tbsp molasses
- 3 Tbsp pure maple syrup
- 1/2 cup brown sugar
- smoked paprika
- ground cumin
Instructions
- Soak the navy beans in water overnight. Drain and rinse before use.
- In a skillet, cook chopped bacon until crispy; remove with a slotted spoon.
- Sauté onions in the bacon grease until caramelized; add minced garlic and cook for an additional two minutes.
- In a large pot, combine soaked beans, chicken stock, bourbon (if using), BBQ sauce, ketchup, molasses, maple syrup, brown sugar, smoked paprika, and cumin. Bring to a boil.
- Pour the mixture into the crockpot along with the bacon and sautéed onions and garlic.
- Cook on high for 5-6 hours or low for 10-12 hours. Stir occasionally.
- After cooking, let sit on warm for an additional 30 minutes to thicken.
