Ingredients
- 2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch pieces
- 3 to 4 garlic cloves, minced
- 1 tablespoon garlic powder
- 1 ½ pounds red potatoes, chopped
- ½ cup grated Parmesan cheese
- ¾ cup shredded Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 tablespoon extra-virgin olive oil
- Salt and pepper to taste
Instructions
- Place all ingredients except shredded Parmesan cheese in the slow cooker. Stir well.
- Cook on HIGH for 2-3 hours or LOW for 4-6 hours.
- After cooking, top with shredded Parmesan cheese and let it sit for a few minutes to melt.
- Serve warm and enjoy!
