- 3 stalks spring onion (0.7 oz)
- 1/2 Tbsp grated ginger (0.1 oz)
- 1 Tbsp soy sauce
- 1 Tbsp toasted sesame oil
- 1 Tbsp brown sugar
- 1/2 Tbsp rice vinegar
Instructions
- Wash and slice the cucumber into thin rounds (about 1/8-inch thick).
- Place sliced cucumbers in a colander, sprinkle with salt, and let drain for about 30 minutes.
- In a mixing bowl, combine grated ginger, chopped spring onion, soy sauce, sesame oil, brown sugar, and rice vinegar to prepare the dressing.
- Toast sesame seeds in a small frying pan over medium heat until golden brown.
- Once the cucumbers are drained and dried, mix them with the dressing in a large bowl. Allow to marinate in the refrigerator for 1-2 hours before serving.
