  • 1 Tbsp brown sugar
  • 1/2 Tbsp rice vinegar

Instructions

  1. Wash and slice the cucumber into thin rounds (about 1/8-inch thick).
  2. Place sliced cucumbers in a colander, sprinkle with salt, and let drain for about 30 minutes.
  3. In a mixing bowl, combine grated ginger, chopped spring onion, soy sauce, sesame oil, brown sugar, and rice vinegar to prepare the dressing.
  4. Toast sesame seeds in a small frying pan over medium heat until golden brown.
  5. Once the cucumbers are drained and dried, mix them with the dressing in a large bowl. Allow to marinate in the refrigerator for 1-2 hours before serving.
