Ingredients

Instructions
- In a large bowl, combine cucumbers, grated carrots, red onion, bell pepper, and parsley. Toss lightly.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey (if using), salt, and pepper.
- Drizzle the dressing over the vegetable mixture and toss gently to coat evenly.
- Chill in the refrigerator for at least 15 minutes before serving.
