- 1 pound ground beef
- 1 large onion
- 1 green bell pepper
- 1 red bell pepper
- 8 corn tortillas
- 1 can (10 ounces) enchilada sauce
- 2 cups shredded cheese (cheddar and Monterey Jack)
Instructions
- In a large skillet over medium heat, brown the ground beef with salt, pepper, chili powder, and cumin. Remove and set aside.
- Sauté chopped onion and bell peppers in the same skillet for about 5 minutes. Add minced garlic and cook for an additional 30 seconds.
- Return the beef to the skillet, then stir in tortilla strips and enchilada sauce until well combined.
- Top with shredded cheese, cover, and cook on low for 5-7 minutes until cheese melts.
- Garnish with fresh cilantro before serving.
