Ingredients
- 1 head iceberg lettuce
- 1/4 lb Italian salami
- 1 cup shredded mozzarella cheese
- 1 (15 1/2 oz) can garbanzo beans
- ⅓ cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 2 tsp Dijon mustard
- 1/2 tsp salt and pepper
- 1/4 cup grated pecorino romano OR parmesan, plus more for serving
Instructions
- In a large mixing bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well blended.
- Add chopped iceberg lettuce, julienned Italian salami, shredded mozzarella cheese, and rinsed garbanzo beans to the bowl.
- Gently toss the ingredients to coat them with the vinaigrette. Adjust seasoning if necessary.
- Serve immediately with additional grated cheese on top.
