- 4 large yellow onions
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 8 cups beef broth
- 1 cup dry white wine (optional)
- 1 French baguette
- 2 cups Gruyère cheese
Instructions
- In a large pot, melt butter and olive oil over medium heat. Add sliced onions, salt, and sugar; cook for 30-40 minutes until golden brown.
- Stir in garlic and cook for an additional minute. Add wine (if using), broth, thyme, bay leaf, and pepper. Simmer for 20-30 minutes.
- Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and toast for about 5-7 minutes.
- Remove bay leaf from soup. Ladle soup into oven-safe bowls, top with toasted baguette slices and shredded cheese.
- Broil for 3-5 minutes until the cheese is bubbly and golden. Garnish with parsley before serving.
