Ingredients

  • 1 cup heavy cream
  • 1 cup unsweetened almond milk (or hemp milk)
  • 1/3 cup Swerve Sweetener
  • 1 tbsp allulose
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 tsp xanthan gum

Instructions

  1. In a medium saucepan over medium-high heat, whisk together heavy cream, almond milk, Swerve sweetener, and cocoa powder. Bring to a boil while stirring for about one minute.
  2. Remove from heat and mix in vanilla extract. Sprinkle xanthan gum on top and whisk until smooth. Let cool for at least 10 minutes.
  3. Pour the mixture into popsicle molds and freeze for one hour. Insert sticks two-thirds of the way into each popsicle and freeze until solid (at least five hours or overnight).
  4. To unmold, run warm water over the outside of the mold for a few seconds and gently pull on the stick.
