Ingredients
- 1 cup heavy cream
- 1 cup unsweetened almond milk (or hemp milk)
- 1/3 cup Swerve Sweetener
- 1 tbsp allulose
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 tsp xanthan gum
Instructions
- In a medium saucepan over medium-high heat, whisk together heavy cream, almond milk, Swerve sweetener, and cocoa powder. Bring to a boil while stirring for about one minute.
- Remove from heat and mix in vanilla extract. Sprinkle xanthan gum on top and whisk until smooth. Let cool for at least 10 minutes.
- Pour the mixture into popsicle molds and freeze for one hour. Insert sticks two-thirds of the way into each popsicle and freeze until solid (at least five hours or overnight).
- To unmold, run warm water over the outside of the mold for a few seconds and gently pull on the stick.
