- 4 bone-in, skin-on chicken thighs
- 6 cloves garlic, minced
- 4 tablespoons olive oil

- 2 pounds baby potatoes, halved
- 2 tablespoons fresh lemon juice

Instructions
- Marinate the chicken: In a mixing bowl, combine minced garlic, olive oil, dried oregano, salt, pepper, and lemon juice. Add chicken thighs, ensuring they're well-coated. Cover and refrigerate for at least 30 minutes.
- Preheat oven to 400°F (200°C). Toss halved baby potatoes with olive oil, salt, and pepper in a large bowl.
- On a baking sheet, place marinated chicken skin-side up and arrange potatoes around them. Bake for 35-40 minutes until chicken reaches 165°F and potatoes are golden brown.
- Let rest for 5 minutes before serving. Garnish with freshly chopped parsley.
