  • 1 whole chicken (45 pounds)
  • 4 tablespoons unsalted butter, softened
  • 6 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 lemon, quartered

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the chicken dry and place it in a roasting pan.
  3. In a bowl, mix together softened butter, garlic, Parmesan cheese, salt, pepper, oregano, and thyme.
  4. Carefully separate the skin from the chicken and spread half of the mixture underneath. Rub the rest on top.
  5. Squeeze lemon wedges over the chicken and place remaining wedges inside its cavity.
  6. Roast for about 1 hour or until internal temperature reaches 165°F (75°C), basting halfway through.
  7. Let rest for 10-15 minutes before carving and serve garnished with parsley.
