- 1 whole chicken (4–5 pounds)
- 4 tablespoons unsalted butter, softened
- 6 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 lemon, quartered
Instructions
- Preheat oven to 425°F (220°C).
- Pat the chicken dry and place it in a roasting pan.
- In a bowl, mix together softened butter, garlic, Parmesan cheese, salt, pepper, oregano, and thyme.
- Carefully separate the skin from the chicken and spread half of the mixture underneath. Rub the rest on top.
- Squeeze lemon wedges over the chicken and place remaining wedges inside its cavity.
- Roast for about 1 hour or until internal temperature reaches 165°F (75°C), basting halfway through.
- Let rest for 10-15 minutes before carving and serve garnished with parsley.
