- 5 garlic scapes
- 1 medium lemon (zest and juice)
- 1/2 ounce Parmesan cheese (or nutritional yeast for vegan)
- 1/4 cup pistachios (raw or roasted)
- 1 packed cup baby spinach
- 1/2 teaspoon kosher salt
- 1/2 cup extra-virgin olive oil
Instructions
- Trim and coarsely chop the garlic scapes. Zest and juice the lemon.
- In a food processor, combine chopped garlic scapes, pistachios, and spinach. Process until finely chopped.
- Add lemon juice, zest, grated Parmesan cheese, and salt. Blend until you achieve a uniform paste.
- With the processor running, slowly drizzle in the olive oil until fully emulsified.
