- 2 pounds baby red potatoes
- 8 slices bacon
- 1 small yellow onion

Instructions
- Cook the potatoes in salted water until fork-tender (10-15 minutes). Drain and let steam dry.
- In a skillet, fry bacon until crispy; transfer to a paper towel to drain.
- Sauté diced onion in the bacon fat until softened, then add minced garlic.
- Whisk honey, mustard, salt, pepper, and vinegar into the skillet; heat until slightly reduced.
- Toss warm dressing with potatoes and crispy bacon gently to combine.
- Serve warm, garnished with chopped parsley.
