Ingredients
- 1 cup granulated sugar
- ¾ cup light corn syrup
- ¼ cup water
- 2 tablespoons powdered ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon ground allspice
- 2 ½ tablespoons unflavored gelatin powder
- ½ cup cold water (for gelatin)
- Powdered sugar (for dusting)
Instructions
- Bloom the gelatin: Mix gelatin with ½ cup cold water in a small bowl and let sit for 5-10 minutes.
- Make the syrup: In a medium saucepan over medium heat, combine granulated sugar, corn syrup, water, ginger, cinnamon, allspice, and salt. Stir until dissolved, then boil until it reaches 240°F.
- Combine: Remove from heat and stir in bloomed gelatin until dissolved. Add vanilla extract.
- Whip: Pour into a stand mixer and whip on high speed for about 10-15 minutes until fluffy.
- Chill: Dust an 8×8 inch pan with powdered sugar, pour in marshmallow mixture, and let set at room temperature for at least four hours.
- Cut: Dust a surface with powdered sugar, turn out the slab onto it, cut into squares, and enjoy!
