  • 2 ½ tablespoons unflavored gelatin powder
  • ½ cup cold water (for gelatin)
  • Powdered sugar (for dusting)

Instructions

  1. Bloom the gelatin: Mix gelatin with ½ cup cold water in a small bowl and let sit for 5-10 minutes.
  2. Make the syrup: In a medium saucepan over medium heat, combine granulated sugar, corn syrup, water, ginger, cinnamon, allspice, and salt. Stir until dissolved, then boil until it reaches 240°F.
