- 2 ½ cups all-purpose flour

- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 2 tablespoons brewed coffee (cooled)
- Powdered sugar (for decoration)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, ginger, cinnamon, nutmeg, baking soda, and salt; set aside.
- In another bowl, beat together softened butter and brown sugar until creamy. Add egg, vanilla extract, and cooled coffee; mix well.
- Gradually combine the dry mixture into the wet mixture until just combined.
- Scoop dough onto prepared baking sheet, spacing evenly.
- Bake for 10-12 minutes until edges are set but centers remain soft. Cool on the baking sheet for five minutes before transferring to a wire rack.
- Decorate with a drizzle of powdered sugar mixed with brewed coffee if desired.
