Instructions

  3. In another bowl, beat together softened butter and brown sugar until creamy. Add egg, vanilla extract, and cooled coffee; mix well.
  4. Gradually combine the dry mixture into the wet mixture until just combined.
  5. Scoop dough onto prepared baking sheet, spacing evenly.
  6. Bake for 10-12 minutes until edges are set but centers remain soft. Cool on the baking sheet for five minutes before transferring to a wire rack.
