Ingredients
- 3 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon baking soda
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- ¾ cup brown sugar, packed
- ½ cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the dry ingredients: flour, ginger, cinnamon, baking soda, nutmeg, and salt.
- In another bowl, cream the softened butter and brown sugar until light and fluffy.
- Mix in molasses, egg, and vanilla extract until well combined.
- Gradually add the dry mixture to the wet ingredients until just combined; do not overmix.
- Divide the dough in half, wrap in plastic wrap, and chill for at least 2 hours or overnight.
- Preheat oven to 350°F (175°C). Roll out chilled dough to about ¼ inch thick and cut into gingerbread man shapes.
- Bake on parchment-lined baking sheets for 8-10 minutes until edges are firm but centers are soft. Allow cooling before decorating.
