  • ½ cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the dry ingredients: flour, ginger, cinnamon, baking soda, nutmeg, and salt.
  2. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Mix in molasses, egg, and vanilla extract until well combined.
  4. Gradually add the dry mixture to the wet ingredients until just combined; do not overmix.
  5. Divide the dough in half, wrap in plastic wrap, and chill for at least 2 hours or overnight.
  6. Preheat oven to 350°F (175°C). Roll out chilled dough to about ¼ inch thick and cut into gingerbread man shapes.
  7. Bake on parchment-lined baking sheets for 8-10 minutes until edges are firm but centers are soft. Allow cooling before decorating.
