- 1.5 pounds skinless, boneless chicken thighs
- 2 cups cooked jasmine rice
- 15 ounces canned chickpeas
- 8 ounces grape tomatoes
- 5 ounces fresh spinach
- 6 ounces feta cheese
- Fresh lemon juice
- Olive oil
Instructions
- Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Sear in a large skillet with olive oil until cooked through.
- In the same skillet, sauté grape tomatoes and garlic until softened. Add spinach and cook until wilted.
- Stir in cooked rice and chickpeas, then mix in lemon juice and remaining tomatoes.
- Combine feta with olive oil, lemon juice, and oregano; fold into rice mixture before serving.
