Ingredients
- ¾ cup extra-virgin olive oil
- Juice and zest of 1 large lemon (about ¼ cup juice)
- ¼ cup red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- ¼ cup crumbled feta (optional)
Instructions
- In a pint jar with a lid, combine olive oil, lemon juice and zest, red wine vinegar, Dijon mustard, oregano, and minced garlic.
- Seal the jar tightly and shake until all ingredients are emulsified.
- If using feta cheese, add it to the jar and gently shake again to combine.
- Taste and adjust seasoning with salt and pepper as desired.
- Serve immediately or store in the refrigerator for up to 3 weeks.
