- 1 small cucumber, grated and excess moisture squeezed out

- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill, chopped
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine ground turkey, breadcrumbs, egg, minced garlic, oregano, thyme, salt, pepper, and parsley; mix until just combined.
- Shape the mixture into meatballs and place on a parchment-lined baking sheet; drizzle with olive oil.
- Bake for 20-25 minutes until cooked through (internal temperature of 165°F).
- For tzatziki: Mix Greek yogurt, grated cucumber (drained), minced garlic, olive oil, lemon juice, dill, salt, and pepper; refrigerate for at least 15 minutes before serving.
