- 1 ½ pounds carrots, peeled and cut into ½ inch thick slices
- 1 ½ tablespoons honey or maple syrup
- ¼ cup butter
- ¼ cup light brown sugar
- ¼ teaspoon salt
Instructions
- In a large saucepan, add sliced carrots to water and bring to a simmer over medium-high heat. Cook for about 8-10 minutes until fork-tender but still firm.
- Drain excess water from the pan, then add honey, butter, brown sugar, and salt. Stir well to coat the carrots evenly.
- Cook over medium heat for an additional 4-5 minutes until the mixture thickens into a syrupy glaze.
- Remove from heat and serve warm, optionally garnished with fresh parsley.
