Ingredients
- 2 USDA Prime Dry-Aged Bone-In Rib Steaks (16 oz. each)
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 6 cloves garlic (minced)
- 2 lemons (juice of)
- Fresh herbs: rosemary, parsley, tarragon, cilantro, mint
- 2 tsp kosher salt
- 1 tsp black pepper
Instructions
- Pat the steaks dry and season with kosher salt and black pepper.
- Preheat your grill until hot and ready.
- In a pan over medium heat, melt butter and olive oil; sauté shallots and garlic until translucent.
- Stir in fresh herbs, lemon juice, smoked paprika, remaining salt and pepper; set aside.
- Grill steaks directly over high heat for 4 minutes per side; then move to indirect heat until internal temperature reaches 135°F for medium doneness.
- Let rest for 10 minutes before slicing against the grain and serving with herb sauce.
