Ingredients
- 4 boneless skinless chicken breasts
- 4 medium-sized jalapeños
- 8 slices bacon
- 4 ounces cream cheese
- 1 cup shredded cheddar cheese
- BBQ sauce for basting
- 2 tablespoons coconut sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 ½ teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Combine rub ingredients in a bowl and set aside.
- Mix cream cheese and cheddar in another bowl.
- Prepare jalapeños by halving and removing seeds. Pound chicken breasts to an even thickness.
- Stuff each chicken breast with jalapeño halves and cream cheese mixture.
- Wrap each breast in bacon and secure with toothpicks.
- Grill over medium heat until cooked through; baste with BBQ sauce in the last few minutes.
