Ingredients
- 1 tablespoon peanut oil
- 3 cups broccoli florets
- 1 lb ground beef
- 1 yellow onion, diced
- 1 red bell pepper, sliced
- 2 tablespoons cornstarch + 2 tablespoons cold water
- 1 cup beef broth
- 1/4 cup soy sauce
- 3 tablespoons packed brown sugar
- 1–2 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1 teaspoon toasted sesame oil
- 3 cups cooked rice
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Prepare the sauce by mixing cornstarch with water and combining beef broth, soy sauce, brown sugar, honey, garlic, ginger, and sesame oil in a bowl.
- In a large skillet over medium heat, heat the oil and cook the broccoli for about 4-5 minutes until tender; remove from pan.
- In the same skillet, cook ground beef and onion over medium-high heat until browned; drain excess grease.
- Add bell peppers to the beef mixture for another minute of cooking.
- Pour in the prepared sauce and let it simmer before adding the cornstarch mixture to thicken.
- Return broccoli to the pan; mix well and serve hot over cooked rice.
