- 1 pound ground beef
- 2 cups enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup diced onions
Instructions
- In a large skillet, brown the ground beef over medium heat, seasoning with salt, pepper, chili powder, and cumin until fully cooked (7-10 minutes). Drain excess fat.
- Warm corn tortillas in a separate skillet for about 30 seconds on each side until pliable.
- Preheat the oven to 375°F (190°C). In a baking dish, spoon 2-3 tablespoons of the beef mixture onto each tortilla along with some onions and cheese. Roll tightly and place seam-side down in the dish.
- Pour enchilada sauce over the rolled tortillas and sprinkle remaining cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
