  • 32 ounces small curd cottage cheese
  • 16 ounces shredded Colby Jack cheese
  • 1 pound cooked bacon
  • ¾ cup all-purpose flour (or gluten-free substitute)
  • 10 ounces frozen chopped spinach (thawed and drained)
  • Assorted vegetables (such as red bell pepper and onion)

Instructions

  1. Preheat oven to 350°F. Spray a 9×13-inch baking pan with nonstick cooking spray.
  2. Cook bacon until chewy-crisp, cool, chop, and set aside.
