Ingredients
- 4 salmon fillets (about 6 ounces each)
- 2 tablespoons olive oil
- 2 cups broccoli florets
- 2 cups baby carrots, halved
- 1 cup cherry tomatoes, halved
- 1 lemon, sliced
- Dried Italian herbs, garlic powder, smoked paprika, salt, and pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss broccoli, baby carrots, and cherry tomatoes in a bowl with 1 tablespoon olive oil and seasonings until coated.
- Spread vegetables on one side of the baking sheet.
- Pat salmon dry and place it on the other side of the baking sheet. Drizzle with remaining olive oil and season.
- Top salmon with lemon slices.
- Bake for 15-20 minutes until salmon flakes easily and vegetables are tender.
- Serve garnished with fresh parsley.
