Ingredients
- 1 ½ cups grated zucchini
- 1 ¾ cups whole wheat flour
- ⅓ cup melted coconut oil or olive oil
- ½ cup honey or maple syrup
- 2 eggs (or flax eggs for vegan option)
- ½ cup milk of choice
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon sea salt
- Optional: chopped walnuts or pecans
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9” x 5” loaf pan.
- In a large mixing bowl, whisk together melted coconut oil and honey. Add eggs and mix until smooth.
- Stir in milk, baking soda, cinnamon, vanilla extract, salt, and nutmeg.
- Gently fold in the grated zucchini then gradually add flour until just combined.
- If using nuts, fold them into the batter.
- Pour the batter into the prepared loaf pan and sprinkle with cinnamon on top for added flavor.
- Bake for 55 to 60 minutes until a toothpick inserted comes out clean.
- Allow cooling on a wire rack before slicing.
