Ingredients

  • 1 ½ cups grated zucchini
  • 1 ¾ cups whole wheat flour
  • ⅓ cup melted coconut oil or olive oil
  • ½ cup honey or maple syrup
  • 2 eggs (or flax eggs for vegan option)
  • ½ cup milk of choice
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • Optional: chopped walnuts or pecans

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9” x 5” loaf pan.
  2. In a large mixing bowl, whisk together melted coconut oil and honey. Add eggs and mix until smooth.
  3. Stir in milk, baking soda, cinnamon, vanilla extract, salt, and nutmeg.
  4. Gently fold in the grated zucchini then gradually add flour until just combined.
  5. If using nuts, fold them into the batter.
  6. Pour the batter into the prepared loaf pan and sprinkle with cinnamon on top for added flavor.
  7. Bake for 55 to 60 minutes until a toothpick inserted comes out clean.
  8. Allow cooling on a wire rack before slicing.
