Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss halved potatoes with olive oil, salt, black pepper, rosemary, thyme, garlic powder, and red pepper flakes (if using) until evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes until golden brown and crispy, flipping halfway through for even cooking.
- Remove from the oven, garnish with parsley, and serve warm.
